Soda Bread: Is that a "Scawn" or a "Scone" ?

One of the most constantly debated bread terms in kitchens around Ireland has to be about  “Scawns” and “Scones”.  My granny always said that although they were spelt the same, a ‘scawn’ of bread was the big one that you sliced with your tea and that the wee ones with jam on them for treats were the 'scones' !    I believe she may have had a point.

I love scones! I make them every other day or so just because I can. The kids love them and when someone drops in they’re great to have at hand.


So here is a simple white Scone recipe that anyone can make and that has never let me down – famous last words says he…

My Ingredients:

500g Plain flour
125g real butter
tspn baking powder
tspn sugar
pinch salt
2 fresh eggs at room temperature
200ml water + 50ml milk mixed together

My Method:

1. I never sieve the flour and stuff – instead I put the flour, baking powder, salt and sugar into a bowl and using a balloon whisk, I whisk the dry ingredients together for a couple of seconds. This combines the ingredients well and introduces air into the mix.

2. Now add the butter and rub it into the flour with the palm of your hands so as to get it in fast with no messing about with the “tips of your fingers” as they teach you in most recipe books! Whisk it all again for a few seconds. At this stage if you want to add currants, raisins, chopped cherries, seeds or even mixed peel into your scones do it now, but make sure you sprinkle a little flour over the fruit and toss them around in it to help them to sit in the dough and not sink to the bottom of the finished scones.

Break the two eggs into the flour and pour in ¾ of the water and milk mix.

I say ¾ only because you can always add more but you can’t take it out. Making bread and pastry to a recipe that you swear by has only one real outside force that can govern your result and that, strangely enough, is the weather! Well, really it is the atmosphere and the amount of moisture in the air on the day. That is why you never add the given amount of liquid to a mix – add it as it is needed is the golden rule.

Back to the mix.

3. Using a wooden spoon or your hand pull the flour into the wet ingredients and mix it all together for a minute or so keeping your hand light so as to not make the dough heavy! Add the rest of the liquid if needed. The dough should be soft, like a pillow, to the touch.

4. Sprinkle a little flour over the dough and pull it together in the bowl with your hand. Tip it out onto your worktop with a little more flour sprinkled on it.

Making scones and all other soda-type breads is totally different to a yeast bread mix. The secret to scone bread dough is to be fast and light. When kneading this type of dough you are only pulling it into shape for cutting – nothing else. So knead for a few seconds pulling the dough to the centre from the edges until you have it nice and smooth on the bottom. Now turn it over.

5. Roll out the dough gently until it is about 3cm thick. Cut out your scones with a 70mm cutter which is about the same width as an average water glass or half pint glass. This gives you a scone of a good size not a wee picky thing!
Beat an egg with a little milk, about equal amounts, and brush over the top of the scones. What this does is to simply glaze the top of the bread which gives a lovely colour to the finished scones.

6. Place the scones on to a Baking tray. I do not grease, butter or flour the tray when making scones – it is not needed and serves no purpose! Pop the scones in a pre-heated oven at 190ºC, Gas 5 for 14 -16 minutes until golden and hollow-sounding when you tap them on the bottom. Done.

These scones have a handful of milled organic Flaxseed & raisins added

Wheaten scones and the many variations of them are nothing to be scared off! But that's for another day.

The Irish Cheese Awards at the SHOP Exhibition is now firmly established as the major event in Ireland for the cheese industry. The appeal of the awards is the competition between the small cottage based producers, large commercial creameries and importers and recognition of their role in developing trade on the island of Ireland.
The competition provides a showcase for visitors and professionals to view and sample firsthand the tremendous variety of cheeses now available in Ireland. It also delivers a buying audience from specialist delicatessen outlets to multiple retailers plus hoteliers and restaurateurs.

Grilled Oysters with a Bacon & Blue Cheese Crumb

I love September. It's the time of year that the Mother Nature presents her bounty! Apples, blackberries, cabbages, chillies, damsons, elderberries, juniper berries, kale, wild mushrooms, pears, peppers, pumpkins, sweetcorn, red grouse, goose, crayfish, shellfish & Oysters!
This is a Great time of year for Irish Oysters!
Mmmmm Oysters! Fresh from the sea, they taste like your mouth just jumped into the Atlantic Ocean (off the Pier in Mountcharles) on New Years Day!
Some folks aren't too sure about swallowing down these tasty fruits of the sea in their natural state, so here is a simple but delicious recipe for a grilled oyster dish. You can use these as a lunch or as a starter course if you have company around. I use a blue cheese but you can use cheddar or any other cheese if you prefer.

My Ingredients:12 oysters
3 slices smoked streaky bacon
50g Bellingham Blue cheese (or your own particular favourite blue cheese)
50g white breadcrumbs
My Method:1.Grill your bacon under a fast heat and set aside.
2. Wash the oysters with a scrubbing brush.
3. To open them: use an oyster knife or a small, thick, pointed (but blunt) knife. Holding the oyster, flat side up, in a thick cloth to protect your hand - insert the knife at the hinge of the oyster. Push and twist the knife so as to break the hinge open. Slide the knife across the inside of the top shell to cut the muscle. Discard the top shell.
4. Slide your knife under the oyster and cut the bottom muscle to loosen it completely from the shell. Arrange them on your serving plate.
5. Slice the cooked bacon into thin slivers and put a little over each oyster. Crumble the cheese over each one and sprinkle the breadcrumbs over them all.
6. Grill or bake in a pre-heated oven (180* C) for 1 minute and serve immediately

Donegal Bay Oysters & How I open an Oyster!

Ireland produces two types of Oysters: the "Native Oyster" also known as the flat oyster (Ostrea Edulis) which is harvested seasonally & the "Pacific Oyster", also called Rock Oyster (Crassostrea Gigas) which is widely available all year round due to our cooler climate and is the one more commonly seen in restaurants.

There has always been quite a lot of debate (among chefs especially) on the correct method to open an oyster. Most french or classically-trained chefs tend to open them from the side which works best with the flat oyster. The truth is, there is No correct way to open them - just are just personal preferred methods!

So for any of you who do not know.....

Here is how I open an Oyster!

1. Use an oyster knife or a small, thick, pointed (but blunt) knife.

2. Holding the oyster, flat side up, in a thick cloth to protect your hand - insert the knife at the hinge of the oyster.

3. Push and twist the knife so as to break the hinge open.

4. Slide the knife across the inside of the top shell.

Half way across the top shell cut the muscle attached to it.

Make the cut clean with your knife and discard the top shell.

5. Slide your knife under the oyster and cut the bottom muscle to loosen it completely from the shell

6. Turn the oyster over, to present the better side, for service
mmmmmm! Don't forget the Lemon wedges!

Happy Heart Garlic Rapeseed Oil - Winner of Best Organic Product 2011

"There was a 100% increase in number of companies entering National Organic Awards 2011" says Bord Bia. And that's in a recession!

 This is the fifth year for the National Organic Awards, organised by Bord Bia. A total of 169 individual products were judged with awards given in eight different categories.

Overall Winner, Kitty Colchester from Second Nature Oils said “I am really honored to have Happy Heart recognised as a superior organic rapeseed oil product in Ireland. We take great pride in the manufacturing of our fully organic rapeseed oil and the development of the flavoured range was a new departure for us – I’m delighted to see that it has paid off!”

This week’s Guest Chef – Paul Montgomery from Harvey's Point

Paul Montgomery started working as a kitchen porter and pot washer in the early 1990’s. Finding a passion for the kitchen, he attended Killybegs Catering College, served his apprenticeship and 20 years later, after a lot of seriosly hard work, is now the Head Chef in the multi-award winning and internationally recognised lakeside located Harvey’s Point Hotel,  near Donegal Town, Ireland.

Paul loves taking traditional recipes and bringing them back to life. “I love using simple ingredients,” says Paul. “Here in Donegal, I think, we have the tastiest lamb, beef and seafood in the country and the rest of Ireland is slowly recognising this."


"The visiting foodie-tourists had their eyes opened during the recent  Taste of Donegal Food Festival. They just couldn't believe the honest flavours, that we're so used to, here in the North West of Ireland”.

Simply Braised Donegal Lamb Shanks


Ingredients:
4 lamb shanks seasoned with salt & pepper
50g butter
1 large onion
½ head celery
1 head leek
2 carrots
2 large tomatoes,
6 mushrooms
1 bay leaf, sprig of thyme, sprig of rosemary
2 tbls tomato puree
½ cinnamon stick
1 star anise
2 glasses red wine
1 litre chicken stock
1 litre lamb or vegetable stock
you can use stock cubes!
If it's good enough for Marco-Pierre-White it's good enough for home cooking!


Method:
1. Chop roughly the onion, leek, celery, carrot & mushroom. Sweat off the veg in a medium pot with some butter until soft.
2. Add the chopped tomatoes, herbs, cinnamon, star anise and let this start to cook slowly.
3. Meanwhile in a hot frying pan with a little oil, brown your lamb shanks well on all sides and place them in a large ovenproof casserole dish - leave aside.
4. Add some red wine to the frying pan to deglaze (to lift the flavours from the bottom of the pan) and reduce this wine by half.
5. Add the tomato puree to the cooked vegetables and stir. Then pour the reduced wine over the vegetables with the chicken & lamb stock. Mix all together well.
6 Pour this over your lamb shanks and cover with a lid or tinfoil. Cook, in a pre-heated oven at 150ºC for 4½ hours. Serve with mashed potatoes & the juices and vegetables from the pan.
